Whipped feta cucumber bites

Today I’m bringing you another glimpse into our little end-of-summer snow cone party. Along with the sparkling berry sangria, I made these little cucumber bites. They couldn’t have been easier to put together, which was perfect, because I never allow myself enough time to get everything ready when I have to. These only take 15-20 minutes max to put together and they’re so delicious! Bonus: if you have leftover cheese, its great on toast!

You’ll need:

6-8 Persian cucumbers (I used these because they are smaller and seedless but regular cucumbers would work too)

8 oz block of feta

4 oz whipped cream cheese

Equipment: spoon, knife and food processor


1. Cut the cucumbers into one inch slices

2. Use a spoon to scoop out some of the center of each cucumber slice, making a small dip for the cheese to rest in

3. Combine feta and cream cheese in a food processor. Blend until smooth

4. Scoop a small spoonful of cheese mixture into the center of each cucumber cup
