Clean Pumpkin Snickerdoodles

Are you all fall recipe-d out yet? I know there are pumpkin recipes everywhere right now, so please forgive me for adding one more to the mix. I think this will be the only one I make this year since I’ve got plenty non-pumpkin recipes in the works. I knew I wanted to make a snickerdoodle with pumpkin, but I decided to take it one step further and roll them in a pumpkin spice mixture. They aren’t the most photogenic cookies, but I promise they’re soft, fluffy and yummy!

Clean Pumpkin Snickerdoodles

Ingredients

Dough

1/2 cup pumpkin puree

3/4 cup raw sugar

1 1/2 cups whole wheat pastry flour

1 egg

1 tsp vanilla

1/2 tsp baking soda

1/2 tsp cream of tartar

1/2 cup pumpkin puree

Topping

1 1/2 tsp cinnamon

3/4 tsp ginger

1/2 tsp nutmeg

1/8 tsp allspice

3 tsp raw sugar

Directions

1. Add all ingredients for the dough to a mixing bowl and mix well.

2. Combine topping ingredients in a small bowl.

3. Scoop dough into balls and roll in the topping mixture. (The dough was a little sticky, so I just scooped it out and dropped it in the sugar and spice. Then it was more shapeable)

4. Place on a baking sheet.

5. Bake at 350 degrees for 10-12 minutes.
