Clean Coffee Cake Muffins

You know what’s not in coffee cake? Coffee. Yeah, I didn’t know that for the longest time. I refused to eat my mom’s coffee cake because I thought it had coffee in it and coffee was gross. Once I could be convinced that it did not, I could not get enough of it. Big slices were my favorite (albeit not the healthiest) breakfast. I have been wanting to clean up the recipe for a while and decided to make into a muffin while I was at it. Because muffins are easy. And I love easy. I ate so many of these yesterday that its already time to make a new batch.

Clean Coffee Cake Muffins

2 1/4 cup whole wheat pastry flour

1 cup raw sugar

1/4 cup coconut oil, melted

2 tsp. baking powder

1/2 tsp. baking soda

1 tsp. cinnamon

1/2 tsp. nutmeg

2 egg whites

1 cup buttermilk


1. Mix flour and sugar

2. Cut in melted coconut oil until the mixture is crumbly

3. Set aside 1/2 cup of the mixture

4. Add in the remaining dry ingredients and mix well

5. Mix in the egg whites and buttermilk

6. Evenly distribute into a greased muffin tin (use butter or coconut oil or just use liners)

7. Spoon the crumble mixture over the top

8. Bake at 350 degrees for 20 minutes

    Oh that crumbly part on top is my favorite part! I can’t wait to try these! I always just buy a slice at Starbucks, but you’re right… it’s basically dessert for breakfast. They totally trick you into thinking that CAKE is acceptable to have first thing in the morning. Haha…
    At least the coconut oil and wheat flour will make me feel a little better. 🙂
