Since I work at night, I end up needed one last small meal in the morning when before I go to bed. I could grab a donut or a greasy fast food breakfast sandwich or…. I could have some yummy muffins on hand. I already have a clean pumpkin muffin recipe, but its not pumpkin season anymore. I adapted this recipe to make some clean apple cinnamon muffins
1 3/4 cups whole wheat flour
2/3 cup raw sugar or honey
2 teaspoons baking powder
pinch of salt
pinch of nutmeg
2 (generous) teaspoons cinnamon 🙂
2 teaspoons vanilla
1/4 cup coconut oil
1 cup unsweetened applesauce
2/3 cup milk of choice (whole, skim, almond, soy, etc…)
Combine all dry ingredients in a mixing bowl and mix well.
Add remaining ingredients. Hint: Microwave coconut oil until it is liquid to make mixing easier.
Distribute mixture evenly into a lined muffin tin. Makes 12 muffins.
Bake at 350 degrees for 15-20 minutes or until a toothpick comes out clean.
