Chocolate chip cookie cake

Sometimes you just need a little something sweet. I’ve found that if I try to restrict added sugars completely, I turn into a complete sugar monster. I want to eat candy and donuts and soda all the time (and I don’t even really like those things). While I do try to avoid processed sugars in everything I make and eat, I’ve been experimenting with raw sugar and I’ll indulge in some dark chocolate every once in a while. If I’m going to have a treat, I better make it as healthy as possible right? So here is my recipe for an almost clean chocolate chip cookie cake, which, by the way, even won over my anti-wheat-flour-in-anything-sweet husband:


1 stick of organic butter (softened)
1/2 cup raw sugar

Add and mix:

1 cup whole wheat pastry flour
1/4 tsp baking soda
1 teaspoon vanilla
1 egg
1/2 cup dark chocolate chips

Smooth mixture into a greased 9 inch cake pan (I use the butter wrapper to grease my pan). Bake at 350 degrees for 20-25 minutes or until a toothpick in the center comes out clean. Be very careful not to overbake or it will dry out.
