Clean Mini Meatloaves

I adapted these mini meatloaves from a family recipe, making them muffin-size instead of a loaf. That makes them easy to take for lunch or warm-up as a quick dinner. I used ground pork, since that is what we had on hand, but you can use the meat of your choice or even a blend of several.

Mini Meatloaves

1 lb ground pork (or turkey or ground beef)

8oz can tomato sauce

1 egg

1/2 cup whole wheat panko or breadcrumbs

1/4 teaspoon marjoram

1/4 teaspoon thyme

1/4 teaspoon oregano

1/3 cup finely chopped onion

1/3 cup finely chopped green pepper

pinch of salt and pepper

Mix all ingredients except meat

Add in meat and mix well

Evenly divide into a 12 cup muffin tin

Bake at 350 degrees for 30 minutes or until internal temperature reaches 165 degrees
