Stuffed chicken breast and oven potatoes

We made a delicious dinner tonight adapted from a recipe I found in SELF magazine.

Stuffed chicken breasts

4 boneless skinless chicken breasts
1 cup goat cheese
1 tsp italian seasoning
1 tsp fresh parsley

Combine goat cheese, italian seasoning and parsley in a bowl and mix well. Cut a slit in each chicken breast and stuff with 1/4 of the cheese mixture. Place in a pre-heated skillet coated with olive oil.

Cook approximately 6-8 minutes on each side (we used HUGE chicken breasts so they had to be finished in the oven).

Oven Potatoes 

5-6 small potatoes, cut into pieces
1/2 tsp rosemary
1/2 tsp thyme
1/2 tsp garlic powder
salt and pepper to taste
olive oil

Chop potatoes and place in a bowl. Pour a drizzle of olive oil over the potatoes and toss to coat. Add the seasonings and toss to evenly coat. Spread the potatoes in a single layer on a baking sheet. Cook at 350 for 25-30 minutes or until tender.

Delicious and easy!!
